Christmas Kentucky Butter Cake

Merry Christmas.  I hope you all had a wonderful day!  Oh how sweet and buttery this cake is.  The cake is a pound cake with the addition of the sweet butter sauce being poured over it as it cools in the pan.




Christmas Kentucky Butter Cake

1 cup softened butter
3 cups sugar
4 eggs
1 tablespoon vanilla
1 teaspoon almond extract
3 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 cup buttermilk

Butter Glaze

1/3 cup butter
3/4 cup sugar
2 tablespoons water
2 teaspoons vanilla

For optional icing glaze
can icing

Preheat oven to 325 degrees

Cream together butter, sugar, eggs, vanilla and almond extract until light and fluffy.  With the mixer on low speed add the dry ingredients alternately with the buttermilk until combined then increase speed to medium and beat for 3 minutes.

Pour batter into a greased and floured 10 inch bundt pan.  Bake for 1 hour or until knife inserted into middle of cake comes out clean.

with cake still in pan, poke holes all over the top with a fork.

Melt together the ingredients for the Butter Sauce.  Pour Butter Sauce over cake, let cake completely cool before inverting on your serving dish.

After cake is on serving dish if you wish you can microwave can icing for a few seconds and drizzle over the cake.  I used about 1/2 cup of red and 1/2 cup of green for this Christmas cake
