Get back into a Fall routine with 30 minute Sweet and Sour Pork

Dinner does not have to be difficult when using Smithfield Marinated Pork.  Just by adding a few ingredients and a little bit of time you have dinner on the table in a flash.



With soccer practice, band practice and homework there is little time left to prepare a meal, get everything ready for the next day and get to bed on time.


I shopped at Walmart and picked up this awesome Smithfield Garlic and Herb Marinated Pork Loin Filet.  With just adding 5 more ingredients I am ready to make a super easy 30 minute meal.


I take my Smithfield Pork Loin Filet and split it into two pieces lengthwise down the middle.  Place the two pieces into a baking dish and cover with foil.  I then bake the Pork Loin Filet at 425 degrees for 30 minutes or until the internal temperature reaches 150 degrees.



While the pork loin filet is baking I prepare the sweet and sour sauce by adding Italian dressing, apricot preserves, fresh pineapple and a red pepper to a skillet and begin cooking until the mixture is hot and the red pepper and pineapple are tender.

Also before the pork loin filet comes out of the oven you can cook your instant rice according to package directions.


To serve cut pork loin filet into pieces and place on top of the rice then pour the sweet and sour sauce over top of the pork loin filet.  I absolutely loved the flavor of this super easy 30 minute Sweet and Sour Pork using a Smithfield Marinated Pork Loin Filet.  Smithfield takes all the fuss out of having to marinate your pork loin filet, you only have to take it out of the package and start preparing your meal.

Sweet and Sour Pork

1 Smithfield Garlic and Herb Marinated Pork Loin Filet
1 jar (18 ounce) apricot preserves
1 cup Italian Dressing
1 red pepper, sliced
1 cup fresh diced pineapple chunks
3 cups instant minute rice (prepared according to package)

Preheat oven to 425 degrees.  Cut pork loin filet in half lengthwise.  Place the pork loin filet into a baking dish and cover with foil.  Bake in the oven for 30 minutes or until the internal temperature reaches 150 degrees

While the pork tenderloin filet is baking, prepare the sweet and sour sauce by adding the apricot preserves, Italian dressing, sliced red pepper and fresh pineapple to a skillet.  Cook until the red pepper and pineapple are tender and the sauce is hot and sticky.

Also prepare the instant minute rice while the pork loin filet is baking.

After the pork loin filet is done baking slice it up into pieces.  Place the pieces of pork loin filet on top of the rice and then pour over the sweet and sour sauce...enjoy!
